The denser crumb carves cleanly, supports tall tiers and carries fondant or toppers more reliably than a light sponge. Chocolate ganache can add further structure.

Transport and display

Chocolate mud with ganache is one of the more stable options for longer drives, warmer conditions and structured designs. Ganache sets firmer than buttercream, although the cake should still be kept cool.
